● 1 cup fresh watercress
● 2 sweet potatoes
● 1⁄4 cup cooked black beans
● 1⁄2 cup diced red onions
● 1 tablespoon lime juice
● 1 cup toasted walnuts or cashews
● Olive oil
● Salt and pepper to taste
For the sauce:
● 1 cup toasted cashews
● 2 tablespoons of olive oil
● Salt and pepper to taste
● 2 tablespoons lemon juice or lime juice
● 1⁄2 cup almond or cashew milk or
water
● 4 cloves of garlic
